Country Ham Restaurant Week: October 15-25

For generations, country ham has been a taste of North Carolina. Salt-cured, slow-aged and, sometimes, kissed by smoke until time transforms a simple cut of pork into something unmistakably Southern. Now, an old North Carolina tradition is having a delicious renaissance.

Oct. 15-25, Country Ham Restaurant Week brings together 12 dynamic restaurants from the mountains to the coast, with chefs putting their own spin on this time-honored ingredient. Expect country ham to move beyond the biscuit and onto the plate in unexpected, inspired and distinctly North Carolina ways.

The celebration coincides with the return of the N.C. State Fair Country Ham Competition, connecting generations of farmers, curers and cooks with the chefs carrying the tradition forward today.
