Fiesta Strip Steak takes top prize in N.C. beef
recipe contest at the Mountain State Fair
FLETCHER – Susie Zuerner of Buncombe County took home $200 and the blue ribbon for her Fiesta Strip Steak recipe in the N.C. Cattleman’s Beef Council “Live Well with Lean Beef” Recipe Contest at the N.C. Mountain State Fair.
Seth Austin, 15, of Buncombe County, took second place and $150 for his Spicy Triple Cheese Burger. Rheta Merrell of Rutherford County won $100 and a third-place ribbon for a Ponderosa House Salad recipe. Judges also awarded an honorable mention to Alan Austin of Buncombe County for Beef Brisket.
Each recipe required at least 3 ounces of lean beef per serving and was judged on taste, ease of preparation, appearance and originality.
The winning recipe follows:
Fiesta Strip Steaks
- 4 small strip steaks
- 3-4 small bell peppers cut into ½ inch strips
- ½ cup honey
- 2 teaspoons lemon juice
- ½ teaspoon cinnamon
- ½ cup red wine vinegar
- 3 tablespoons olive oil
- 3-4 small tomatoes
- Salt and pepper to taste
In small saucepan over medium heat, cook honey, red wine vinegar, cinnamon and lemon juice until reduced, about 15 minutes. In a small frying pan, place 3 tablespoons of olive oil and cook peppers over medium heat until done. Remove from heat and drain over paper towels.
Slice tomatoes and arrange on serving dish.
Prepare strips by seasoning with salt and pepper prior to placing on the grill. Over hot grill, sear each strip 8 minutes per side, turning once with tongs. Remove strips from grill and let rest 5 minutes.
Place peppers and tomatoes on serving dish and coat with honey mixture.
Serves 4.
