Honey Pie

Recipe courtesy of Sheila Duncan as seen on episode “PieBird,” Season 3


  • 8 ounces butter
  • 6 ounces sugar
  • 4 tablespoons cornmeal
  • ¼ teaspoon salt
  • 6 ounces local honey
  • 3 eggs
  • 4 ounces cream
  • 1 tablespoon cider vinegar
  • Sea salt
  • 1 unbaked 9-inch pie shell

Melt butter in pan on low heat. Add the sugar, cornmeal, salt and honey. Remove from stove, add eggs, cream, vinegar and vanilla. Mix until combined. Pour into the unbaked pie shell. Bake at 350 degrees for 20-30 minutes. Sprinkle with sea salt just before serving.

Lisa’s comments: I like honey, but this pie made me LOVE honey. The sprinkle of sea salt sets the honey off perfectly! Next time I need to take a pie somewhere, this is the one I plan to make.
