Quality means "The inherent properties of a product that determine it's relative degree of excellence."

Grading is a voluntary service paid for by poultry processors.

Product is continuously monitored by USDA graders and assigned a grade based on the following quality factors:

  • Confirmation, Fleshing, Fat Covering,
  • Exposed Flesh, Defeathering
  • Discolorations, Broken Bones,
  • Missing Parts, and Freezing Defects.

U.S. Inspected Poultry
U.S. Inspected Logo

Inspection refers to wholesomeness of poultry or poultry products and their fitness for human food.

Inspection is mandatory and required by law.

The product and processing plants premises, equipment, and facilities are inspected to ensure that poultry and poultry products are processed under sanitary conditions.

Inspection involves only those properties related to wholesomeness, not quality.
