North Carolina Mixed Vegetables

Vegetables are rich in vitamins A, C, E, folate and other B vitamins. They are high in potassium and other minerals. They are also high in fiber and rich in bioflavonoids.

Many vegetables we eat are in the botanical sense fruits, such as beans, cucumbers, eggplants, tomatoes, and corn kernels. The U.S. Supreme Court decided that vegetables are plant foods served "in, with, or after" the soup, fish, or meat in contrast to fruits, which either garnish or conclude a meal.
